ABOUT

 

I have loved French pastry my entire life. On my very first trip to Paris,

I journeyed to the Pierre Hermé patisserie and stood in line for over

20 minutes to buy some macarons. From my first bite, I knew that this macaron was the most authentic and most delicious in the whole world. Never in my life have I experienced a taste that gave me so much happiness. For the few minutes that it took me to eat, my mind was whirling with 

astonishment and glee on how the pastry maker could create distinctive 

flavors in the small French pastry. Its soft and perfectly combined texture melted in my mouth with delight. To me, it was pure perfection.

Following intensive study from the world renown Le Cordon Bleu,

my dream in life has been the creation of the perfect macaron,

the ones that you can only find on the Left Bank of Paris. 

For some of you weekend warrior bakers out there, you know so well

the delicate intricacies that are required to perfect creating macarons.

No matter how many times you try, perfecting its creation seems harder than rocket science. For many years, I have honed my skills to the point where I can replicate the art created by the best French pastry chefs, 

my inspiration for this new adventure I find myself taking.
